I have Acronis to back up my computer. However, the file is compressed and too big to fit on a DVD. Is there any way I can "uncompress" it, remove unwanted programs and burn it to disk?

The first step you should do before burning the image is to use the Tools section of Acronis to "verify" the image...this ensures it is a valid workable image.
Then simply use your burning tool to make as many DVD's as needed. Most decent burning apps let you choose the sizes at the beginning of the burn.
I use CDBurnerXPPro but Nero and other top of the line apps will do it as well.
